Sweet Rice Porridge

I believe E's exact words this morning were "It taste's exactly like theirs, it's amazing!"  I tried recreating a favorite dish we order when we're lucky enough to go to our favorite breakfast spot in Ballard.  It seemed easy enough, and it was:



1 14oz. can light coconut milk
1 10oz. package of frozen jasmine rice
1tsp cinnamon
sweeten as desired (honey, brown sugar etc.)
sliced banana
handful of dried cranberries or raisins
and a dusting of cinnamon sugar (they add toasted coconut at the restaurant)

We devoured it on this damp and chilly morning and the chickens loved their small portion of our leftovers.  This one is definitely moving into our winter rotation as an hearty and warming start to our day!  Especially because I can find all the ingredients at Trader Joe's.

  2. It was so crazy easy, just dump the rice and milk in a pan and warm, then stir in the sweetener, pour in bowls and serve with desired toppings. It's good that we use light milk, cause I kinds wanna make this every morning...
